Ingredients
- 🍚 Quinoa – 1 cup
- 🥒 Cucumber – diced
- 🌶 Bell peppers – chopped
- 🧅 Red onion – thinly sliced
- 🌿 Fresh herbs (parsley, mint) – chopped
- 🍋 Lemon juice – 2 tbsp
- 🫒 Olive oil – 3 tbsp
- 🧂 Salt & pepper – to taste
Instructions
- 🍚 Cook quinoa according to package directions. Let it cool.
- 🥣 In a large bowl, combine cooked quinoa, cucumber, bell peppers, and red onion.
- 🍋 In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
- 🥗 Pour dressing over the quinoa mixture and toss gently to combine.
- 🌿 Garnish with fresh herbs and serve chilled.
