Ingredients

  • 🍚 Quinoa – 1 cup
  • 🥒 Cucumber – diced

Instructions

  • 🍚 Cook quinoa according to package directions. Let it cool.

  • 🍋 In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
