Ingredients

  • 🧈 Butter – 200g softened
  • 🍬 Sugar – 200g caster sugar
  • 🥚 Eggs – 4 large
  • 🌾 Flour – 200g self-raising flour
  • 🍓 Jam – 150g raspberry or strawberry
  • 🥛 Cream – 200ml whipped

Instructions

  • 🥣 Cream together butter and sugar until light and fluffy in a large bowl.
  • 🥚 Add eggs one by one, beating well before folding in the flour.
  • 🍰 Bake the batter in two greased cake tins at 180°C for 20-25 minutes.
  • 🍓 Cool the sponges completely, then spread jam and whipped cream between layers.
  • ✨ Dust the top with a light sprinkle of icing sugar and serve.
