Ingredients

  • 🐦 Quail – 2 whole
  • 🌿 Herbs (rosemary, thyme) – chopped
  • 🍋 Lemon – sliced
  • 🧄 Garlic – 2 cloves, minced
  • 🧅 Onion – 1, quartered
  • 🥕 Carrots – 1, chopped
  • 🥔 Potatoes – 2, quartered
  • 🧂 Salt & Pepper – to taste
  • 🥄 Olive Oil – 2 tbsp

Instructions

  • 🔥 Preheat oven to 400°F (200°C).
  • 🥣 Prepare quail by rinsing and patting dry. Rub with olive oil, herbs, garlic, salt, and pepper.
  • 🧅 Stuff cavity with lemon slices and herbs. Arrange quail on a roasting pan with onions, carrots, and potatoes.
  • ⏲️ Roast for 40-45 minutes, or until quail is cooked through and vegetables are tender. Baste with pan juices occasionally.
  • ✨ Let rest for 5-10 minutes before serving. Garnish with fresh herbs.
