Ingredients
- 🐦 Quail – 2 whole
- 🌿 Herbs (rosemary, thyme) – chopped
- 🍋 Lemon – sliced
- 🧄 Garlic – 2 cloves, minced
- 🧅 Onion – 1, quartered
- 🥕 Carrots – 1, chopped
- 🥔 Potatoes – 2, quartered
- 🧂 Salt & Pepper – to taste
- 🥄 Olive Oil – 2 tbsp
Instructions
- 🔥 Preheat oven to 400°F (200°C).
- 🥣 Prepare quail by rinsing and patting dry. Rub with olive oil, herbs, garlic, salt, and pepper.
- 🧅 Stuff cavity with lemon slices and herbs. Arrange quail on a roasting pan with onions, carrots, and potatoes.
- ⏲️ Roast for 40-45 minutes, or until quail is cooked through and vegetables are tender. Baste with pan juices occasionally.
- ✨ Let rest for 5-10 minutes before serving. Garnish with fresh herbs.
