Ingredients

  • 🦆 Whole Duck – about 5 lbs
  • 🥓 Bacon – 4 slices
  • 🧅 Onion – 1 large, chopped
  • 🥕 Carrots – 2 medium, chopped
  • 🌿 Herbs – Thyme, Rosemary
  • 🍷 Red Wine – 1 cup
  • 🍲 Duck Stock – 4 cups
  • 🧈 Butter – 2 tbsp
  • 🧂 Salt & Pepper – to taste

Instructions

  • 🔥 Sear the duck in a hot pan until golden brown on all sides.
  • 🧅 In a roasting pan, add onions, carrots, and bacon.
  • 🦆 Place the seared duck on top of the vegetables and herbs.
  • 🍷 Deglaze the pan with red wine, then add duck stock.
  • 🌡️ Cover and roast at 325°F (160°C) for 2 hours, or until the duck is tender. Press the duck for serving.
