Ingredients

  • 🐷 Pork Jowl – thinly sliced
  • 🍝 Linguine – 8 oz
  • 🧄 Garlic – minced
  • 🌶️ Red Pepper Flakes – to taste
  • 🧀 Parmesan Cheese – grated
  • 🌿 Fresh Parsley – chopped
  • 🥚 Egg Yolks - 2 large

Instructions

  • 🥓 Render pork jowl in a pan until crispy. Set aside.
  • 🍝 Cook linguine according to package directions.
  • 🧄 Sauté garlic and red pepper flakes in the rendered pork fat.
  • 🥚 Whisk egg yolks with some pasta water and parmesan cheese.
  • 🍝 Toss cooked linguine with the garlic mixture, egg yolk mixture, and crispy pork jowl. Garnish with parsley and more parmesan.
