Pomodoro pesto

Ingredients

  • 1 lb pasta (spaghetti 🍝, penne)
  • 1/4 cup olive oil 🫒
  • 2 cloves garlic 🧄, minced
  • 1 (28 ounce) can crushed tomatoes 🍅
  • 1/2 cup pesto 🌿
  • 1/4 cup grated Parmesan cheese 🧀
  • Salt 🧂 and pepper 🌶️ to taste
  • Fresh basil leaves 🍃 for garnish (optional)

Instructions

  • Cook pasta according to package directions. Drain, reserving 1/2 cup pasta water. 💧
  • While pasta is cooking, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute. 🔥
  • Stir in crushed tomatoes and bring to a simmer. Cook for 15 minutes, stirring occasionally. 🥄
  • Stir in pesto and Parmesan cheese. Season with salt and pepper to taste. 🧂🌶️
  • Add cooked pasta to the sauce and toss to coat. If sauce is too thick, add a little reserved pasta water until desired consistency is reached. 🍝
  • Serve immediately, garnished with fresh basil leaves, if desired. 🍃 Enjoy! 🎉
