Ingredients

  • 🥬 Mixed salad greens – 2 cups
  • 🥚 Eggs – 2 large
  • 🍎 Apple – thinly sliced
  • 🥗 Vinaigrette – 2 tbsp of choice
  • 🥜 Walnuts – 1 tbsp chopped
  • 🧂 Salt and pepper – to taste

Instructions

  • 🍳 Bring a pot of water to a gentle simmer with a splash of vinegar.
  • 🥚 Carefully crack eggs into the water and poach for 3 minutes until whites are set.
  • 🥗 Arrange the fresh greens and apple slices in a wide serving bowl.
  • ✨ Gently place the poached eggs on top of the bed of salad greens.
  • 🥣 Drizzle with vinaigrette and sprinkle with walnuts before serving immediately.
