Ingredients
- 🥬 Mixed salad greens – 2 cups
- 🥚 Eggs – 2 large
- 🍎 Apple – thinly sliced
- 🥗 Vinaigrette – 2 tbsp of choice
- 🥜 Walnuts – 1 tbsp chopped
- 🧂 Salt and pepper – to taste
Instructions
- 🍳 Bring a pot of water to a gentle simmer with a splash of vinegar.
- 🥚 Carefully crack eggs into the water and poach for 3 minutes until whites are set.
- 🥗 Arrange the fresh greens and apple slices in a wide serving bowl.
- ✨ Gently place the poached eggs on top of the bed of salad greens.
- 🥣 Drizzle with vinaigrette and sprinkle with walnuts before serving immediately.
