Ingredients
- π₯ Avocado β 1 ripe
- π§ Onion β 1/4 finely chopped
- πΆοΈ JalapeΓ±o β 1/2 finely chopped (optional)
- πΏ Cilantro β 2 tbsp chopped
- π₯ Eggs β 2 large
- π§ Vinegar β 1 tbsp (for poaching)
- π Toast β for serving
Instructions
- π₯ Prepare guacamole: Mash avocado with onion, jalapeΓ±o (if using), cilantro, salt, and lime juice.
- π§ Poach eggs: Heat water with vinegar in a pan until simmering. Gently crack eggs into the water.
- β¨οΈ Cook eggs for 3-4 minutes until whites are set and yolks are still runny.
