Poached Egg with Guacamole

Ingredients

  • 🥑 Avocado – 1 ripe
  • 🧅 Onion – 1/4 finely chopped
  • 🌶️ Jalapeño – 1/2 finely chopped (optional)
  • 🌿 Cilantro – 2 tbsp chopped
  • 🥚 Eggs – 2 large
  • 💧 Vinegar – 1 tbsp (for poaching)
  • 🍞 Toast – for serving

Instructions

  • 🥑 Prepare guacamole: Mash avocado with onion, jalapeño (if using), cilantro, salt, and lime juice.
  • 💧 Poach eggs: Heat water with vinegar in a pan until simmering. Gently crack eggs into the water.
  • ♨️ Cook eggs for 3-4 minutes until whites are set and yolks are still runny.
  • 🍞 Toast bread slices to your preference.
  • 🍳 Assemble: Spread guacamole on toast and top with a poached egg. Serve immediately.
