Ingredients
- 🥛 Heavy cream – 2 cups
- 🟢 Pistachio paste – 3 tbsp smooth
- 🥚 Egg yolks – 5 large
- 🍬 Granulated sugar – 1/2 cup
- 🍦 Vanilla extract – 1 tsp
- 🔥 Extra sugar – for the caramelized topping
Instructions
- 🥘 Gently heat heavy cream and pistachio paste in a saucepan until just simmering.
- 🥣 Whisk egg yolks and sugar together, then slowly temper with the warm cream.
- 🥧 Pour the mixture into ramekins and bake in a water bath at 300°F (150°C) for 45 minutes.
- ❄️ Cool to room temperature and refrigerate for at least 4 hours until firm.
- 🔥 Sprinkle a thin layer of sugar on top and melt with a torch until golden and crisp.
