Ingredients
- 🥩 Beef Brisket – 5 lbs
- 🧂 Curing Salt – 1/2 cup
- 🧄 Garlic – 4 cloves, minced
- 🌶️ Black Peppercorns – 2 tbsp, cracked
- 🌿 Coriander Seeds – 2 tbsp, crushed
- 🤎 Brown Sugar – 1/4 cup
- 💧 Water – as needed for brining
Instructions
- 🧂 Prepare the curing brine by combining salt, garlic, peppercorns, coriander, and brown sugar in water.
- 🥩 Submerge the beef brisket in the brine, ensuring it's fully covered. Refrigerate for 5-7 days.
- 🚿 Rinse the brisket thoroughly after brining.
- ♨️ Smoke the brisket at 225°F (107°C) for about 3 hours, or until it reaches an internal temperature of 190°F (88°C).
- 💨 Steam the pastrami for an additional hour to tenderize it further. Slice thinly and serve.
