Ingredients

  • 🥩 Beef Brisket – 5 lbs
  • 🧂 Curing Salt – 1/2 cup
  • 🧄 Garlic – 4 cloves, minced
  • 🌶️ Black Peppercorns – 2 tbsp, cracked
  • 🌿 Coriander Seeds – 2 tbsp, crushed
  • 🤎 Brown Sugar – 1/4 cup
  • 💧 Water – as needed for brining

Instructions

  • 🧂 Prepare the curing brine by combining salt, garlic, peppercorns, coriander, and brown sugar in water.
  • 🥩 Submerge the beef brisket in the brine, ensuring it's fully covered. Refrigerate for 5-7 days.
  • 🚿 Rinse the brisket thoroughly after brining.
  • ♨️ Smoke the brisket at 225°F (107°C) for about 3 hours, or until it reaches an internal temperature of 190°F (88°C).
  • 💨 Steam the pastrami for an additional hour to tenderize it further. Slice thinly and serve.
