Ingredients
- 🍝 Pasta – spaghetti or bucatini
- 🥓 Guanciale – diced
- 🍅 Canned Tomatoes – crushed
- 🧀 Pecorino Romano – grated
- 🌶️ Red Pepper Flakes – to taste
- 🫒 Olive Oil – extra virgin
Instructions
- 🥓 Render guanciale in a pan until crispy. Remove guanciale and set aside, reserving the rendered fat.
- 🍅 Add canned tomatoes to the pan with the guanciale fat and cook until slightly thickened.
- 🌶️ Season with red pepper flakes.
- 🍝 Cook pasta until al dente. Reserve some pasta water before draining.
- 🥘 Add pasta to the sauce along with some pasta water and grated Pecorino Romano. Toss to combine. Top with crispy guanciale and more cheese. Enjoy! ✨
