Ingredients

  • 🍝 Pasta – spaghetti or bucatini
  • 🥓 Guanciale – diced
  • 🍅 Canned Tomatoes – crushed
  • 🧀 Pecorino Romano – grated
  • 🌶️ Red Pepper Flakes – to taste
  • 🫒 Olive Oil – extra virgin

Instructions

  • 🥓 Render guanciale in a pan until crispy. Remove guanciale and set aside, reserving the rendered fat.
  • 🍅 Add canned tomatoes to the pan with the guanciale fat and cook until slightly thickened.
  • 🌶️ Season with red pepper flakes.
  • 🍝 Cook pasta until al dente. Reserve some pasta water before draining.
  • 🥘 Add pasta to the sauce along with some pasta water and grated Pecorino Romano. Toss to combine. Top with crispy guanciale and more cheese. Enjoy! ✨
