Ingredients
- 🌾 Chickpea flour – 1 cup
- 💧 Water – 2 cups
- 🌿 Parsley – chopped
- 🧅 Onion – small, finely chopped
- 🧂 Salt – to taste
- ⚫ Black pepper – to taste
- 🛢️ Oil – for frying
Instructions
- 💧 In a saucepan, whisk together chickpea flour and water until smooth.
- 🧅 Add chopped onion, parsley, salt, and pepper to the mixture.
- 🔥 Cook over medium heat, stirring constantly, until the mixture thickens and pulls away from the sides of the pan.
- 🥄 Pour the mixture onto a lightly oiled surface and spread to about 1/4 inch thickness. Let it cool and solidify.
- 🔪 Cut the solidified mixture into squares or triangles.
- 🛢️ Heat oil in a frying pan and fry the panelle until golden brown on both sides. Serve hot.
