Ingredients

  • 🌾 Chickpea flour – 1 cup
  • 💧 Water – 2 cups
  • 🌿 Parsley – chopped
  • 🧅 Onion – small, finely chopped
  • 🧂 Salt – to taste
  • ⚫ Black pepper – to taste
  • 🛢️ Oil – for frying

Instructions

  • 💧 In a saucepan, whisk together chickpea flour and water until smooth.
  • 🧅 Add chopped onion, parsley, salt, and pepper to the mixture.
  • 🔥 Cook over medium heat, stirring constantly, until the mixture thickens and pulls away from the sides of the pan.
  • 🥄 Pour the mixture onto a lightly oiled surface and spread to about 1/4 inch thickness. Let it cool and solidify.
  • 🔪 Cut the solidified mixture into squares or triangles.
  • 🛢️ Heat oil in a frying pan and fry the panelle until golden brown on both sides. Serve hot.
