Ingredients
- 🍚 Paella rice – 2 cups
- 🍗 Chicken thighs – 6 pieces
- 🦐 Shrimp – 1 lb, peeled and deveined
- 🦑 Calamari – 1 lb, cut into rings
- 🫑 Bell peppers – 1, chopped
- 🧅 Onion – 1, chopped
- 🧄 Garlic – 4 cloves, minced
- 🍅 Tomatoes – 2, crushed
- 🌿 Saffron threads – a pinch
- 🍋 Lemon wedges – for serving
- 💧 Chicken broth – 4 cups
Instructions
- 🔥 Sauté chicken in a large paella pan until browned; remove and set aside.
- 🧅 Sauté onion, bell pepper, and garlic until softened. Add tomatoes and cook for 5 minutes.
- 🍚 Stir in paella rice and saffron; cook for 2 minutes.
- 💧 Add chicken broth, bring to a boil, then reduce heat and simmer. Add chicken, shrimp, and calamari.
- 🥘 Cook until rice is tender and seafood is cooked through (about 20 mins). Let rest for 10 mins, garnish with lemon wedges, and serve hot.
