Ingredients
- 🍚 Pearl barley – 1 cup
- 🧅 Onion – 1/2, chopped
- 🥕 Carrots – 1/2 cup, diced
- 🍷 Red wine – 1/2 cup
- 🍅 Tomato paste – 2 tbsp
- 🌿 Vegetable broth – 4 cups
- 🧀 Parmesan cheese – grated, for garnish
Instructions
- 🧅 Sauté the onion and carrots in olive oil until softened.
- 🍚 Add the pearl barley and toast for a few minutes.
- 🍷 Deglaze the pan with red wine, scraping up any browned bits.
- 🍅 Stir in tomato paste, then add vegetable broth, one ladle at a time, stirring frequently until absorbed.
- 🧀 Continue adding broth and stirring until the barley is creamy and al dente. Garnish with Parmesan cheese and serve. ✨
