Ingredients
- 👂 Orecchiette pasta – 1 pound
- 🥦 Cime di Rapa (broccoli rabe) – 1 bunch
- 🧄 Garlic – 3 cloves, minced
- 🌶️ Red pepper flakes – to taste
- 🌿 Olive oil – for cooking
- 🧀 Pecorino cheese – grated, for serving
Instructions
- 💧 Cook orecchiette in boiling salted water until al dente.
- 🥦 While pasta cooks, blanch cime di rapa in the same boiling water for 5 minutes. Drain, reserving some pasta water.
- 🧄 In a pan, sauté garlic and red pepper flakes in olive oil until fragrant.
- 🌿 Add cime di rapa to the pan and cook until tender, adding pasta water if needed.
- 🍝 Toss cooked pasta with cime di rapa mixture. Serve with grated Pecorino cheese. Enjoy! ✨
