Ingredients

  • 🥩 Beef or Mutton – for Nihari
  • 🧅 Onions – sliced for frying
  • 🧄 Ginger-Garlic Paste – for flavor
  • 🌾 Whole Wheat Flour – for Kulcha
  • 🥛 Milk – for Kulcha dough
  • 🌿 Nihari Masala – blend of spices
  • 🧈 Ghee or Oil – for cooking
  • 🍋 Lemon – for garnish

Instructions

  • 🔥 Sauté onions in ghee until golden brown. Add ginger-garlic paste and meat; cook until browned.
  • 🥘 Add Nihari masala and water; simmer on low heat for several hours until meat is tender.
  • 🥣 Thicken gravy with flour slurry if needed. Adjust seasoning.
  • 🥖 For Kulcha: Mix flour, milk, and a pinch of salt. Knead into a soft dough and let it rest.
  • ♨️ Roll out Kulchas and cook on a hot tawa until golden brown spots appear. Serve hot with Nihari, garnished with lemon wedges and ginger.
