Ingredients
- 🥩 Beef or Mutton – for Nihari
- 🧅 Onions – sliced for frying
- 🧄 Ginger-Garlic Paste – for flavor
- 🌾 Whole Wheat Flour – for Kulcha
- 🥛 Milk – for Kulcha dough
- 🌿 Nihari Masala – blend of spices
- 🧈 Ghee or Oil – for cooking
- 🍋 Lemon – for garnish
Instructions
- 🔥 Sauté onions in ghee until golden brown. Add ginger-garlic paste and meat; cook until browned.
- 🥘 Add Nihari masala and water; simmer on low heat for several hours until meat is tender.
- 🥣 Thicken gravy with flour slurry if needed. Adjust seasoning.
- 🥖 For Kulcha: Mix flour, milk, and a pinch of salt. Knead into a soft dough and let it rest.
- ♨️ Roll out Kulchas and cook on a hot tawa until golden brown spots appear. Serve hot with Nihari, garnished with lemon wedges and ginger.
