Ingredients
- 🦆 Whole goose – 1 (10-12 lbs)
- 🍎 Apples – 2, quartered
- 🧅 Onion – 1, quartered
- 🌿 Fresh herbs (thyme, rosemary) – 2 sprigs each
- 🥕 Carrots – 2, roughly chopped
- 🥔 Potatoes – 4, quartered
- 🧂 Salt & pepper – to taste
- 🫒 Olive oil – 2 tbsp
Instructions
- 🔥 Preheat oven to 325°F (160°C).
- 🧂 Season the goose inside and out with salt and pepper. Stuff with apples, onion, and herbs.
- 🥕 Place goose on a roasting rack in a roasting pan, surrounded by carrots and potatoes.
- 🫒 Drizzle goose with olive oil. Roast for 2.5 hours, or until internal temperature reaches 165°F (74°C), basting occasionally with pan drippings.
- ✨ Let rest for 15 minutes before carving and serving.
