Ingredients
- 2 cups cooked Japanese rice 🍚
- 2 salmon fillets (4-5 oz each) 🍣
- 2 tbsp mentaiko (spicy cod roe) 🌶️
- 1 tbsp mayonnaise 🧴
- 1 tsp soy sauce 🍶
- 1/2 tsp sesame oil 🫘
- 1/4 tsp sugar 🍬
- Nori seaweed, thinly sliced 🍃
- Sesame seeds for garnish ✨
- Optional: Green onions, chopped 🧅
- Optional: Avocado slices 🥑
Instructions
- Cook Japanese rice according to package instructions. Fluff and set aside. 🍚
- Prepare the mentaiko mayo sauce: In a small bowl, combine mentaiko, mayonnaise, soy sauce, sesame oil, and sugar. Mix well. 🥣
- Cook salmon: You can pan-fry, grill, or bake the salmon. Season with salt and pepper. Cook until the salmon is cooked through and flakes easily. I pan-fry mine skin-side down first for crispy skin. 🍳
- Flake the cooked salmon into bite-sized pieces. 🔪
- Assemble the donburi: Divide the cooked rice between two bowls. 🍚🥣
- Top the rice with flaked salmon. 🍣
- Spoon the mentaiko mayo sauce over the salmon. 🥄
- Garnish with nori seaweed, sesame seeds, and optional green onions and avocado. 🍃✨🧅🥑
- Serve immediately and enjoy! 🎉
