Maple Crème Brûlée

Ingredients
- 2 cups heavy cream 🥛
- 1 cup maple syrup 🍁
- 1 vanilla bean, split and scraped 🔪
- 6 large egg yolks 🥚
- Pinch of salt 🧂
- 1/4 cup granulated sugar (for brûléeing) 🍚
Instructions
- Preheat oven to 300°F (150°C). 🔥
- In a saucepan, combine heavy cream, maple syrup, and vanilla bean (both pod and seeds). Heat over medium heat until just simmering. Remove from heat. ♨️
- In a separate bowl, whisk together egg yolks and salt. 🥣
- Slowly drizzle the warm cream mixture into the egg yolk mixture, whisking constantly to temper the eggs. 🥄
- Strain the mixture through a fine-mesh sieve to remove any solids. 🫴
- Pour the custard into six ramekins. 🍮
- Place ramekins in a baking dish and add hot water to the dish until it reaches halfway up the sides of the ramekins (water bath). 🛁
- Bake for 30-40 minutes, or until the custards are set but still slightly jiggly in the center. ⏰
- Remove ramekins from the water bath and let cool to room temperature. Then, cover and chill in the refrigerator for at least 2 hours. ❄️
- Before serving, sprinkle about 1 tablespoon of granulated sugar evenly over the top of each custard. ✨
- Using a kitchen torch, caramelize the sugar until golden brown and crispy. Alternatively, you can broil the custards for a very short time, watching closely to prevent burning. 🔥
- Let the brûlée crust cool for a minute or two before serving. Enjoy! 😊
