Ingredients
- 🍚 Basmati Rice – 2 cups, soaked for 30 mins
- 🍗 Chicken or Lamb – 500g, large pieces
- 🧅 Onions – 2 medium, thinly sliced
- 🧂 Mandi Spice Mix – 2 tbsp (Cardamom, Clove, Peppercorn)
- 🫒 Ghee or Oil – 3 tbsp
- 🪵 Charcoal – 1 small piece for smoky aroma
- 🥜 Raisins and Almonds – for garnish
Instructions
- 🍗 Rub the meat with Mandi spices and sear in a large pot until golden brown.
- 🧅 Add sliced onions and water, then simmer until the meat is tender and fully cooked.
- 🍚 Remove the meat, add soaked rice to the flavorful broth, and cook on low heat.
- 💨 Place a hot charcoal in a small foil bowl inside the pot with a drop of oil to create smoke.
- ✨ Cover tightly for 5 minutes, then fluff the rice and serve topped with meat and nuts.
