Ingredients

  • 🐑 Lamb shoulder – 3-4 lbs
  • 🧅 Onions – 2 large, chopped
  • 🧄 Garlic – 4 cloves, minced
  • 🌿 Rosemary – 2 sprigs
  • 🥕 Carrots – 2, chopped
  • 🥔 Potatoes – 4, quartered
  • 🍋 Lemon – 1, juiced
  • ✨ Olive oil – 2 tbsp
  • 🧂 Salt & pepper – to taste

Instructions

  • 🔥 Preheat oven to 325°F (160°C).
  • 🐑 Season lamb shoulder with salt, pepper, and herbs.
  • 🧅 Sear lamb in a large pot or Dutch oven until browned on all sides. Remove lamb and set aside.
  • 🥕 Add onions, garlic, and carrots to the pot and cook until softened.
  • 🥔 Place lamb back in the pot, add potatoes, lemon juice, and enough broth or water to cover the bottom. Cover and bake for 3 hours, or until lamb is very tender.
  • ✨ Let rest for 15 minutes before shredding the lamb and serving with the vegetables and pan juices.
