Ingredients

  • 🥛 Full fat milk – 4 cups
  • 🍬 Sugar – to taste
  • 🌰 Cardamom powder – ½ tsp
  • 🥜 Chopped nuts – for garnish
  • 🍶 Saffron strands – a few

Instructions

  • 🔥 Boil milk in a heavy-bottomed pan, stirring occasionally to prevent scorching.
  • ⏳ Simmer on low heat until the milk reduces to about one-third, stirring and scraping the sides of the pan.
  • 🍬 Add sugar and cardamom powder; continue to simmer for a few more minutes until desired consistency is reached.
  • 🍶 Mix in saffron strands and let it steep for a few minutes.
  • 🏺 Pour the rabdi into kulhads (earthen cups), garnish with chopped nuts, and serve chilled or warm.
