Ingredients
- 🥛 Full fat milk – 4 cups
- 🍬 Sugar – to taste
- 🌰 Cardamom powder – ½ tsp
- 🥜 Chopped nuts – for garnish
- 🍶 Saffron strands – a few
Instructions
- 🔥 Boil milk in a heavy-bottomed pan, stirring occasionally to prevent scorching.
- ⏳ Simmer on low heat until the milk reduces to about one-third, stirring and scraping the sides of the pan.
- 🍬 Add sugar and cardamom powder; continue to simmer for a few more minutes until desired consistency is reached.
- 🍶 Mix in saffron strands and let it steep for a few minutes.
- 🏺 Pour the rabdi into kulhads (earthen cups), garnish with chopped nuts, and serve chilled or warm.
