Kolhapuri Mutton Claypot Rice

Ingredients
- 🐑 Mutton – 1 kg, cut into pieces
- 🍚 Rice – 2 cups, soaked
- 🧅 Onions – 2 large, chopped
- 🍅 Tomatoes – 3 medium, chopped
- 🧄 Ginger-Garlic Paste – 2 tbsp
- 🌶️ Kolhapuri Masala – 4 tbsp
- 🌿 Coriander Leaves – for garnish
- 🛢️ Cooking Oil – 3 tbsp
- 🧂 Salt – to taste
Instructions
- 🔥 Heat oil in a pot, add onions and sauté until golden brown.
- 🧄 Add ginger-garlic paste and sauté for a minute, then add tomatoes and cook until soft.
- 🌶️ Add Kolhapuri masala and salt, cook for 2-3 minutes until fragrant.
- 🐑 Add mutton and cook until it's browned.
- 🍚 Add soaked rice and enough water to cook the rice. Transfer everything to a claypot. Cover and cook on low heat until the rice is cooked and mutton is tender.
- 🌿 Garnish with coriander leaves and serve hot.
