Ingredients
- 🔪 Wheat flour noodles – 1 lb
- 💧 Water – 6 cups
- 🐟 Dried anchovies – 10
- 🧄 Garlic – 2 cloves, minced
- 🧅 Onion – 1/2, sliced
- 🥬 Zucchini – 1/2, julienned
- 🥕 Carrot – 1/4, julienned
- 🍄 Mushrooms – 4 oz, sliced
- 🧂 Salt – to taste
- 🌶️ Gochugaru (Korean chili powder) – to taste (optional)
Instructions
- 💧 Simmer anchovies in water for 20 mins, then remove anchovies to make broth.
- 🧅 Add onion and garlic to the broth and simmer for 5 mins.
- 🥕 Add zucchini, carrot, and mushrooms and cook until tender.
- 🍜 Add the noodles and cook until they are tender and cooked through.
- 🧂 Season with salt and gochugaru (if using). Serve hot.
