Ingredients

  • 🔪 Wheat flour noodles – 1 lb
  • 💧 Water – 6 cups
  • 🐟 Dried anchovies – 10
  • 🧄 Garlic – 2 cloves, minced
  • 🧅 Onion – 1/2, sliced
  • 🥬 Zucchini – 1/2, julienned
  • 🥕 Carrot – 1/4, julienned
  • 🍄 Mushrooms – 4 oz, sliced
  • 🧂 Salt – to taste
  • 🌶️ Gochugaru (Korean chili powder) – to taste (optional)

Instructions

  • 💧 Simmer anchovies in water for 20 mins, then remove anchovies to make broth.
  • 🧅 Add onion and garlic to the broth and simmer for 5 mins.
  • 🥕 Add zucchini, carrot, and mushrooms and cook until tender.
  • 🍜 Add the noodles and cook until they are tender and cooked through.
  • 🧂 Season with salt and gochugaru (if using). Serve hot.
