Ingredients

  • 🌿 Kair – dried
  • 🌿 Sangri – dried
  • 🌶️ Red chili powder – for spice
  • 🥭 Dried mango powder – for tanginess
  • 🧅 Onions – chopped
  • 🧄 Ginger-garlic paste
  • 🫘 Chickpea flour (besan) – to thicken the gravy
  • 🧂 Salt – to taste
  • 🥄 Cooking oil

Instructions

  • 💧 Soak kair and sangri overnight or for at least 6-8 hours.
  • 🔥 Heat oil in a pot, add onions, and sauté until golden brown.
  • 🧄 Add ginger-garlic paste and sauté for a minute. Then, add chickpea flour and roast until it turns light brown.
  • 🌶️ Add red chili powder, dried mango powder, salt, and other spices. Sauté for another minute.
  • 🥘 Add the soaked kair and sangri, along with some water. Cook until tender and the gravy thickens.
  • ✨ Garnish with fresh coriander leaves and serve hot with roti or rice.
