Ingredients

  • 🍚 Rice – 2 cups
  • 🥔 Potatoes – diced
  • 🧅 Onions – sliced
  • 🧄 Ginger-garlic paste – 2 tbsp
  • 🌶️ Green chilies – slit
  • 🌿 Curry leaves – 1 sprig
  • 🥛 Coconut milk – 1 cup
  • 🧂 Spices (turmeric, cumin, coriander) – to taste

Instructions

  • 🔥 Heat oil in a pot and add onions, ginger-garlic paste, green chilies, and curry leaves. Sauté until golden.
  • 🥔 Add potatoes and spices, and sauté for 5 minutes.
  • 🍚 Add rice and coconut milk. Bring to a boil, then reduce heat and simmer until rice is cooked.
  • 🥘 Stir occasionally to prevent sticking.
  • 🌿 Garnish with fresh coriander leaves and serve hot.
