Ingredients
- 🍚 Rice – 2 cups
- 🥔 Potatoes – diced
- 🧅 Onions – sliced
- 🧄 Ginger-garlic paste – 2 tbsp
- 🌶️ Green chilies – slit
- 🌿 Curry leaves – 1 sprig
- 🥛 Coconut milk – 1 cup
- 🧂 Spices (turmeric, cumin, coriander) – to taste
Instructions
- 🔥 Heat oil in a pot and add onions, ginger-garlic paste, green chilies, and curry leaves. Sauté until golden.
- 🥔 Add potatoes and spices, and sauté for 5 minutes.
- 🍚 Add rice and coconut milk. Bring to a boil, then reduce heat and simmer until rice is cooked.
- 🥘 Stir occasionally to prevent sticking.
- 🌿 Garnish with fresh coriander leaves and serve hot.
