Ingredients
- 2 cups all-purpose flour 🍚
- 1/4 cup semolina (sooji) 🌾
- 1/4 tsp baking soda 🥄
- 1/4 cup oil 🛢️
- Water as needed💧
- 1 cup moong dal (yellow lentil), soaked overnight 💛
- 1 tbsp coriander powder 🌱
- 1 tsp red chili powder 🌶️
- 1/2 tsp turmeric powder 🧡
- 1/2 tsp garam masala ♨️
- 1/2 tsp amchur (dry mango powder) 🥭
- 1/4 tsp asafoetida (hing) 🌰
- 1 tbsp ginger-garlic paste 🧄
- Salt to taste 🧂
- Oil for deep frying ♨️
Instructions
- Prepare the dough: Combine flour, semolina, baking soda, oil and salt. Add water gradually and knead into a stiff dough. Cover and let it rest for 30 minutes. ⏳
- Prepare the filling: Drain the soaked moong dal. Grind it coarsely. 🥣
- Heat oil in a pan. Add asafoetida and ginger-garlic paste. Sauté for a minute. 🔥
- Add the ground moong dal, coriander powder, red chili powder, turmeric powder, garam masala, amchur, and salt. Sauté until the mixture dries up and becomes crumbly. Let it cool. ♨️
- Divide the dough into small equal portions. Roll each portion into a small circle. Place a spoonful of the filling in the center. 🥄
- Bring the edges together and seal it tightly. Flatten it slightly with your palms. 🤲
- Heat oil in a deep frying pan over medium heat. Gently slide the kachoris into the hot oil. 🛢️
- Fry until golden brown and crispy on both sides. Drain on paper towels. 📄
- Serve hot with chutney or raita. 🍽️
