Ingredients

  • 🥩 Pork shoulder – 3 lbs
  • 🌶️ Dried chilies – ancho, guajillo
  • 🧅 Onion – 1 medium
  • 🧄 Garlic – 4 cloves
  • 🌿 Bay leaves – 2
  • 🌮 Corn tortillas – 12
  • 🧀 Cheese – Oaxaca or mozzarella
  • 🧅 Cilantro & onion – for serving

Instructions

  • 🌶️ Rehydrate dried chilies and blend with garlic, onion, and spices to make birria paste.
  • 🥩 Sear pork shoulder and then slow cook in birria sauce until tender and shreddable.
  • 🔥 Dip tortillas in birria consommé, fill with shredded pork and cheese.
  • ♨️ Cook tacos on a griddle until golden and cheese is melted.
  • 🧅 Serve hot with chopped onion, cilantro, and a side of consommé for dipping.
