Ingredients
- 🥩 Pork shoulder – 3 lbs
- 🌶️ Dried chilies – ancho, guajillo
- 🧅 Onion – 1 medium
- 🧄 Garlic – 4 cloves
- 🌿 Bay leaves – 2
- 🌮 Corn tortillas – 12
- 🧀 Cheese – Oaxaca or mozzarella
- 🧅 Cilantro & onion – for serving
Instructions
- 🌶️ Rehydrate dried chilies and blend with garlic, onion, and spices to make birria paste.
- 🥩 Sear pork shoulder and then slow cook in birria sauce until tender and shreddable.
- 🔥 Dip tortillas in birria consommé, fill with shredded pork and cheese.
- ♨️ Cook tacos on a griddle until golden and cheese is melted.
- 🧅 Serve hot with chopped onion, cilantro, and a side of consommé for dipping.
