Ingredients

  • 🐷 Pork hock – 1 (about 3-4 lbs)
  • 🧅 Onion – 1, quartered
  • 🧄 Garlic – 6 cloves, crushed
  • 🌿 Ginger – 2-inch piece, sliced
  • 🍶 Soy sauce – 1/2 cup
  • 🍬 Sugar – 1/4 cup
  • ☕ Coffee – 1 tbsp (optional)
  • 🌱 Scallions – for garnish

Instructions

  • 💧 Soak pork hock in cold water for at least 30 minutes to remove impurities.
  • ♨️ In a large pot, combine pork hock with onion, garlic, ginger, soy sauce, sugar, and coffee (if using). Add enough water to cover the pork.
  • ⏳ Bring to a boil, then reduce heat to low, cover, and simmer for 2 hours, or until the pork is very tender.
  • 🔪 Remove pork hock from the pot and let it cool slightly. Slice thinly.
  • 🌱 Serve jokbal with scallions and various Korean dipping sauces (such as saeujeot).
