Ingredients

  • 🍗 Chicken – marinated in jerk seasoning
  • 🍚 Rice – long grain or jasmine
  • 🧅 Onion – chopped
  • 🧄 Garlic – minced
  • 🌶️ Scotch Bonnet Pepper – finely chopped (optional)
  • 🌿 Thyme – fresh sprigs

Instructions

  • 🔥 Marinate chicken for at least 2 hours, or preferably overnight.
  • 🍚 Cook rice according to package directions.
  • 🍗 Grill or bake chicken until cooked through.
  • 🧅 Sauté onions and garlic in a pan, then add rice.
  • 🥘 Serve jerk chicken over rice, garnished with thyme.
