Ingredients
- 🌾 Fine bulgur – 2 cups
- 🧅 Onion – 1 medium, grated
- 🌶️ Red pepper paste – 2 tbsp
- 🍅 Tomato paste – 1 tbsp
- 🫙 Isot pepper – 2 tbsp
- 🌿 Parsley – ½ bunch, finely chopped
- 🌱 Mint – ¼ bunch, finely chopped
- 🧅 Scallions – 3-4, finely chopped
- 🍋 Lemon juice – to taste
- 🛢️ Olive oil – to drizzle
- 🧂 Salt – to taste
- 💧 Water – as needed
Instructions
- 🌾 Soak fine bulgur with hot water until softened.
- 🧅 Add grated onion, red pepper paste, tomato paste, isot pepper, and salt. Knead well with your hands until a dough forms.
- 🌿 Gradually add chopped parsley, mint, and scallions. Continue kneading.
- 🍋 Add lemon juice and olive oil. Mix well.
- 🥬 Serve by squeezing small portions in lettuce leaves.
