Ingredients

  • 🌾 Fine bulgur – 2 cups
  • 🧅 Onion – 1 medium, grated
  • 🌶️ Red pepper paste – 2 tbsp
  • 🍅 Tomato paste – 1 tbsp
  • 🫙 Isot pepper – 2 tbsp
  • 🌿 Parsley – ½ bunch, finely chopped
  • 🌱 Mint – ¼ bunch, finely chopped
  • 🧅 Scallions – 3-4, finely chopped
  • 🍋 Lemon juice – to taste
  • 🛢️ Olive oil – to drizzle
  • 🧂 Salt – to taste
  • 💧 Water – as needed

Instructions

  • 🌾 Soak fine bulgur with hot water until softened.
  • 🧅 Add grated onion, red pepper paste, tomato paste, isot pepper, and salt. Knead well with your hands until a dough forms.
  • 🌿 Gradually add chopped parsley, mint, and scallions. Continue kneading.
  • 🍋 Add lemon juice and olive oil. Mix well.
  • 🥬 Serve by squeezing small portions in lettuce leaves.
