Ingredients

  • 🍜 Himokawa Udon Noodles – 200g
  • 🧅 Onion – ½, thinly sliced
  • 🍄 Mushrooms – 100g, sliced
  • 🌿 Green Onions – for garnish
  • 🍲 Dashi Broth – 500ml
  • 🍥 Fish Cakes – sliced (optional)
  • 🥚 Egg – 1 per serving (optional)
  • 🍶 Soy Sauce – 2 tbsp
  • ✨ Mirin – 1 tbsp

Instructions

  • 🍲 Prepare dashi broth and bring to a simmer.
  • 🧅 Sauté onions and mushrooms until softened.
  • 🍜 Add soy sauce and mirin to the broth.
  • 🍥 Add noodles, fish cakes, and cooked vegetables to the broth and cook until noodles are tender.
  • 🥚 Top with a poached or soft-boiled egg (optional) and garnish with green onions before serving.✨
