Ingredients
- 🍜 Himokawa Udon Noodles – 200g
- 🧅 Onion – ½, thinly sliced
- 🍄 Mushrooms – 100g, sliced
- 🌿 Green Onions – for garnish
- 🍲 Dashi Broth – 500ml
- 🍥 Fish Cakes – sliced (optional)
- 🥚 Egg – 1 per serving (optional)
- 🍶 Soy Sauce – 2 tbsp
- ✨ Mirin – 1 tbsp
Instructions
- 🍲 Prepare dashi broth and bring to a simmer.
- 🧅 Sauté onions and mushrooms until softened.
- 🍜 Add soy sauce and mirin to the broth.
- 🍥 Add noodles, fish cakes, and cooked vegetables to the broth and cook until noodles are tender.
- 🥚 Top with a poached or soft-boiled egg (optional) and garnish with green onions before serving.✨
