Ingredients
- 🌾 High-gluten flour – for noodles
- 💧 Water – for dough
- 🧂 Salt – for dough and water
- 🧅 Scallions – chopped, for garnish
- 🌶️ Chili oil – to taste
- 🥩 Protein (optional) – sliced thinly
Instructions
- 🌾 Mix flour, water, and salt to form a dough. Knead well, then rest for at least 30 mins.
- 🖐️ Stretch and fold the dough repeatedly to develop gluten. Then pull into long noodles.
- 끓 Bring a pot of water to boil and add salt. Cook the noodles until they float.
- 🍜 Drain the noodles and toss with chili oil and your choice of toppings and protein.
- ✨ Garnish with chopped scallions and serve immediately.
