Ingredients

  • 🦆 Half goose – cleaned
  • 🌿 Fresh herbs (rosemary, thyme) – chopped
  • 🍋 Lemon – halved
  • 🧄 Garlic – crushed
  • 🧅 Onion – quartered
  • 🥕 Carrots – roughly chopped
  • 🥔 Potatoes – quartered
  • 🧂 Salt & pepper – to taste
  • 💧 Olive oil – for drizzling

Instructions

  • 🔥 Preheat oven to 400°F (200°C).
  • 🦆 Prepare the goose by rubbing with herbs, garlic, salt, pepper, and olive oil. Squeeze lemon juice over it.
  • 🧅 Place onions, carrots, and potatoes in a roasting pan. Place the goose on top of the vegetables.
  • ⏲️ Roast for 1 hour 30 mins, or until the internal temperature reaches 165°F (74°C), basting occasionally with pan juices.
  • 🔪 Let the goose rest for 10 minutes before carving and serving with the roasted vegetables.
