Ingredients

  • 🥩 Short Ribs – 2 lbs, cut into pieces
  • 🥥 Coconut Milk – 1 can
  • 🌶️ Green Curry Paste – 2-3 tbsp
  • 🌿 Thai Basil – 1/4 cup, chopped
  • 🥕 Mixed Vegetables – 1 cup (bell peppers, bamboo shoots)
  • 🐟 Fish Sauce – 1 tbsp

Instructions

  • 🔥 Sear short ribs in a pot until browned on all sides.
  • 🧅 Add green curry paste and cook for 2 minutes until fragrant.
  • 🥥 Pour in coconut milk and fish sauce; bring to a simmer.
  • 🥘 Add vegetables and simmer for 2.5 - 3 hours, or until short ribs are tender.
  • 🌿 Stir in Thai basil before serving hot with rice.
