Ingredients
- 🥩 Short Ribs – 2 lbs, cut into pieces
- 🥥 Coconut Milk – 1 can
- 🌶️ Green Curry Paste – 2-3 tbsp
- 🌿 Thai Basil – 1/4 cup, chopped
- 🥕 Mixed Vegetables – 1 cup (bell peppers, bamboo shoots)
- 🐟 Fish Sauce – 1 tbsp
Instructions
- 🔥 Sear short ribs in a pot until browned on all sides.
- 🧅 Add green curry paste and cook for 2 minutes until fragrant.
- 🥥 Pour in coconut milk and fish sauce; bring to a simmer.
- 🥘 Add vegetables and simmer for 2.5 - 3 hours, or until short ribs are tender.
- 🌿 Stir in Thai basil before serving hot with rice.
