Ingredients

  • 🥩 Beef cubes – 1.5 lbs
  • 🧅 Onions – 2 large, chopped
  • 🫑 Bell peppers – 2, chopped
  • 🍅 Diced Tomatoes – 1 can (14 oz)
  • 🥔 Potatoes – 3 medium, cubed
  • 🥕 Carrots – 2 medium, sliced
  • 🧄 Garlic – 4 cloves, minced
  • 🌶️ Paprika – 2 tbsp
  • 🥣 Beef broth – 6 cups
  • 🌿 Bay leaves – 2

Instructions

  • 🔥 Brown the beef cubes in a large pot or Dutch oven.
  • 🧅 Add onions and cook until softened. Then add bell peppers and garlic; cook for another 2 minutes.
  • 🍅 Stir in paprika, diced tomatoes, potatoes, carrots, beef broth, and bay leaves. Bring to a boil.
  • 🥘 Reduce heat, cover, and simmer for at least 1 hour, or until beef and vegetables are tender.
  • 🌿 Remove bay leaves before serving. Serve hot.
