Ingredients

  • 🥩 Lamb chops – 4-6 pieces
  • 🥔 Baby potatoes – 1 lb, halved
  • 🧄 Garlic – 4 cloves, minced
  • 🧈 Butter – 3 tbsp, unsalted
  • 🍋 Lemon – 1, juiced and zested
  • 🌿 Fresh herbs – 2 tbsp (rosemary and thyme), chopped
  • 🧂 Salt and pepper – to taste
  • 🫒 Olive oil – 2 tbsp

Instructions

  • 🔪 Season lamb chops with salt and pepper while boiling potatoes in salted water until fork-tender.
  • 🔥 Heat oil in a large skillet and sear lamb chops for 3-4 minutes per side until golden brown.
  • 🥔 Add cooked potatoes to the skillet, letting them crisp up alongside the lamb.
  • 🧈 Stir in butter, minced garlic, herbs, and lemon juice, basting the chops and potatoes continuously.
  • ✨ Remove from heat, drizzle remaining herb butter over the dish, and serve immediately.
