Ingredients
- 🥩 Lamb chops – 4-6 pieces
- 🥔 Baby potatoes – 1 lb, halved
- 🧄 Garlic – 4 cloves, minced
- 🧈 Butter – 3 tbsp, unsalted
- 🍋 Lemon – 1, juiced and zested
- 🌿 Fresh herbs – 2 tbsp (rosemary and thyme), chopped
- 🧂 Salt and pepper – to taste
- 🫒 Olive oil – 2 tbsp
Instructions
- 🔪 Season lamb chops with salt and pepper while boiling potatoes in salted water until fork-tender.
- 🔥 Heat oil in a large skillet and sear lamb chops for 3-4 minutes per side until golden brown.
- 🥔 Add cooked potatoes to the skillet, letting them crisp up alongside the lamb.
- 🧈 Stir in butter, minced garlic, herbs, and lemon juice, basting the chops and potatoes continuously.
- ✨ Remove from heat, drizzle remaining herb butter over the dish, and serve immediately.
