Ingredients

  • 🍄 Assorted wild mushrooms – cleaned and sliced
  • 🌿 Fresh herbs (thyme, rosemary) – chopped
  • 🧅 Onion – chopped
  • 🧄 Garlic – minced
  • 🍚 Arborio rice – for risotto (optional)
  • 🧀 Parmesan cheese – grated (optional)
  • 🍶 White wine – dry (optional)
  • 💧 Vegetable broth

Instructions

  • 🔥 Sauté onions and garlic in olive oil until softened.
  • 🍄 Add mushrooms and herbs, cook until tender and browned.
  • 🍚 If making risotto, add rice and toast, then deglaze with white wine.
  • 💧 Gradually add warm vegetable broth, stirring until absorbed (if making risotto). Otherwise, just simmer mushrooms in a bit of broth.
