Florentine Cannoli

Ingredients
- 1 cup all-purpose flour 🌾
- 1/4 cup granulated sugar 🍚
- 1/4 tsp salt 🧂
- 3 tbsp unsalted butter, cold and cubed 🧈
- 1 large egg yolk 🥚
- 1/4 cup sweet Marsala wine 🍷
- Vegetable oil, for frying 🛢️
- 15 oz ricotta cheese, drained 🧀
- 1/2 cup powdered sugar 🍬
- 1/4 cup candied orange peel, finely chopped 🍊
- 1/4 cup chocolate chips 🍫
- Pistachios, chopped, for garnish 🌰
Instructions
- Combine flour, sugar, and salt in a food processor. Pulse to combine. 🥣
- Add butter and pulse until mixture resembles coarse crumbs. 🧈
- In a small bowl, whisk together egg yolk and Marsala wine. 🥚🍷
- Gradually add the wet ingredients to the flour mixture, pulsing until the dough comes together. Wrap in plastic wrap and chill for at least 30 minutes. ❄️
- In a bowl, mix together ricotta cheese, powdered sugar, candied orange peel, and chocolate chips. Set aside. 🧀🍬🍊🍫
- Roll out the dough on a lightly floured surface to about 1/8 inch thickness. 🔪
- Cut out circles using a cookie cutter or glass. 🍪
- Wrap each circle around a cannoli form. ⚙️
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). 🔥
- Fry the cannoli shells until golden brown, about 2-3 minutes per side. ⏳
- Remove from oil and let cool completely on a wire rack. 🌡️
- Carefully remove the cannoli shells from the forms. 👐
- Fill each shell with the ricotta cheese mixture. 🥄
- Garnish with chopped pistachios and serve immediately. 🌰🍽️
