Ingredients

  • 🥔 Potatoes – boiled and sliced
  • 🧅 Onion – finely chopped
  • 🌿 Parsley – chopped
  • 🥓 Bacon – diced (optional)
  • 🥚 Eggs – hard-boiled (optional)
  • 🥛 Mayonnaise – to taste
  • Mustard – to taste
  • Vinegar – to taste
  • Oil – to taste
  • Salt & Pepper – to taste

Instructions

  • 🥔 Boil potatoes until tender, then slice them.
  • 🧅 In a large bowl, combine sliced potatoes with chopped onion and parsley.
  • 🥓 If using bacon, fry until crispy and add to the potato mixture.
  • 🥚 If using eggs, slice and add to the bowl.
  • 🥣 In a separate bowl, whisk together mayonnaise, mustard, vinegar, oil, salt, and pepper.
  • 🥗 Pour the dressing over the potato mixture and gently toss to combine. Let it sit for at least 30 minutes to allow flavors to meld. Serve chilled or at room temperature.
