Ingredients
- 🍆 Eggplant – 1 large
- 🧄 Garlic – 2 cloves, minced
- 🍋 Lemon juice – 2 tbsp
- 🍶 Tahini – 2 tbsp
- 🌿 Olive oil – 2 tbsp
- 🧂 Salt – to taste
- 🌶️ Pepper – to taste
Instructions
- 🍆 Roast or grill the eggplant until soft and the skin is charred. Remove the skin and discard.
- 🥣 In a food processor, combine the eggplant pulp, garlic, tahini, and lemon juice.
- 🌿 Add olive oil, salt, and pepper. Blend until smooth.
- 🥄 Adjust seasoning to taste.
- ✨ Serve chilled or at room temperature with pita bread or vegetables.
