Ingredients

  • 🍆 Eggplant – 1 large
  • 🧄 Garlic – 2 cloves, minced
  • 🍋 Lemon juice – 2 tbsp
  • 🍶 Tahini – 2 tbsp
  • 🌿 Olive oil – 2 tbsp
  • 🧂 Salt – to taste
  • 🌶️ Pepper – to taste

Instructions

  • 🍆 Roast or grill the eggplant until soft and the skin is charred. Remove the skin and discard.
  • 🥣 In a food processor, combine the eggplant pulp, garlic, tahini, and lemon juice.
  • 🌿 Add olive oil, salt, and pepper. Blend until smooth.
  • 🥄 Adjust seasoning to taste.
  • ✨ Serve chilled or at room temperature with pita bread or vegetables.
