Ingredients
- 🍆 Eggplant – 1 large, sliced
- 🍅 Tomato sauce – 1 cup
- 🧀 Mozzarella cheese – 8 oz
- 🌿 Fresh basil – for garnish
- 🧄 Garlic – 2 cloves, minced
- 🧅 Onion – 1/2, chopped
- 🥖 Breadcrumbs - 1/2 cup
Instructions
- 🔥 Preheat oven to 375°F (190°C).
- 🍆 Slice eggplant, salt, and let sit for 15 minutes, then pat dry.
- 🧅 Sauté onion and garlic in olive oil until softened.
- 🍅 Layer eggplant, tomato sauce, and mozzarella in a baking dish.
- 🥖 Sprinkle with breadcrumbs and bake for 25 minutes, or until golden and bubbly.
- 🌿 Garnish with fresh basil and serve.
