Ingredients

  • 🍆 Eggplant – 1 large, sliced
  • 🍅 Tomato sauce – 1 cup
  • 🧀 Mozzarella cheese – 8 oz
  • 🌿 Fresh basil – for garnish
  • 🧄 Garlic – 2 cloves, minced
  • 🧅 Onion – 1/2, chopped
  • 🥖 Breadcrumbs - 1/2 cup

Instructions

  • 🔥 Preheat oven to 375°F (190°C).
  • 🍆 Slice eggplant, salt, and let sit for 15 minutes, then pat dry.
  • 🧅 Sauté onion and garlic in olive oil until softened.
  • 🍅 Layer eggplant, tomato sauce, and mozzarella in a baking dish.
  • 🥖 Sprinkle with breadcrumbs and bake for 25 minutes, or until golden and bubbly.
  • 🌿 Garnish with fresh basil and serve.
