Edamame Chickpea falafel pocket

Ingredients

  • 🌱 Edamame – 1 cup, shelled
  • 🫘 Chickpeas – 1 can, drained
  • 🧅 Onion – 1/2, chopped
  • 🌿 Fresh herbs (cilantro, parsley) – 1/4 cup
  • 🧄 Garlic – 2 cloves, minced
  • 🥖 Pita pockets – 2
  • 🍋 Lemon juice – 1 tbsp
  • 🌶️ Spices (cumin, coriander, salt, pepper) – to taste

Instructions

  • 🥣 Combine edamame, chickpeas, onion, herbs, garlic, spices and lemon juice in a food processor.
  • ⚙️ Process until a coarse mixture forms; do not overmix.
  • 👐 Shape the mixture into small falafel patties.
  • 🔥 Heat oil in a pan and fry the falafel until golden brown and crispy.
  • 🥙 Stuff the falafel into pita pockets and add your favorite toppings.
