Ingredients
- 🌱 Edamame – 1 cup, shelled
- 🫘 Chickpeas – 1 can, drained
- 🧅 Onion – 1/2, chopped
- 🌿 Fresh herbs (cilantro, parsley) – 1/4 cup
- 🧄 Garlic – 2 cloves, minced
- 🥖 Pita pockets – 2
- 🍋 Lemon juice – 1 tbsp
- 🌶️ Spices (cumin, coriander, salt, pepper) – to taste
Instructions
- 🥣 Combine edamame, chickpeas, onion, herbs, garlic, spices and lemon juice in a food processor.
- ⚙️ Process until a coarse mixture forms; do not overmix.
- 👐 Shape the mixture into small falafel patties.
- 🔥 Heat oil in a pan and fry the falafel until golden brown and crispy.
- 🥙 Stuff the falafel into pita pockets and add your favorite toppings.
