Ingredients
- 🍚 Rice – 2 cups
- 🧄 Ginger-garlic paste – 2 tbsp
- 🧅 Onions – 2 medium, chopped
- 🍅 Tomatoes – 2 medium, chopped
- 🌶️ Green chilies – 2-3, slit
- 🥥 Coconut milk – 1 cup
- 🌿 Curry leaves – 1 sprig
- 🌱 Coriander leaves – for garnish
- 🫘 Lentils (dal) - 1/2 cup
Instructions
- 🔥 Heat oil in a pot and add mustard seeds, cumin seeds, and curry leaves. Let them splutter.
- 🧅 Add onions and green chilies, sauté until onions turn golden brown.
- 🧄 Add ginger-garlic paste and sauté for a minute.
- 🍅 Add tomatoes and cook until they soften. Add lentils and rice and saute.
- 🥥 Pour coconut milk and add water according to rice type. Add salt to taste and bring to a boil, then simmer until rice is cooked. Garnish with coriander leaves and serve.
