Ingredients
- 🌱 Yuca – peeled and cut into fries
- 🧀 Pecorino Romano – grated
- 🖤 Black Pepper – freshly ground
- 🌶️ Aji Amarillo Peppers – for Huancaina sauce
- 🥛 Milk or cream – for Huancaina sauce
- 🍪 Crackers or bread – for Huancaina sauce
Instructions
- 🥔 Boil yuca until tender, then cut into fry shapes.
- 🔥 Fry yuca until golden and crispy.
- 🌶️ Prepare Huancaina sauce by blending aji amarillo peppers, cheese, milk and crackers.
- 🍝 Cook pasta (if serving as a pasta dish). Reserve some pasta water.
- 🧀 For Cacio e Pepe, mix cooked pasta with pecorino romano and black pepper, adding pasta water for creaminess.
- ✨ Serve crispy yuca with Huancaina sauce and Cacio e Pepe pasta.
