Ingredients

  • 🌱 Yuca – peeled and cut into fries
  • 🧀 Pecorino Romano – grated
  • 🖤 Black Pepper – freshly ground
  • 🌶️ Aji Amarillo Peppers – for Huancaina sauce
  • 🥛 Milk or cream – for Huancaina sauce
  • 🍪 Crackers or bread – for Huancaina sauce

Instructions

  • 🥔 Boil yuca until tender, then cut into fry shapes.
  • 🔥 Fry yuca until golden and crispy.
  • 🌶️ Prepare Huancaina sauce by blending aji amarillo peppers, cheese, milk and crackers.
  • 🍝 Cook pasta (if serving as a pasta dish). Reserve some pasta water.
  • 🧀 For Cacio e Pepe, mix cooked pasta with pecorino romano and black pepper, adding pasta water for creaminess.
  • ✨ Serve crispy yuca with Huancaina sauce and Cacio e Pepe pasta.
