Instructions
- 1. In a large bowl, whisk together flour, sugar, yeast, and salt. 🥣
- 2. In a separate bowl, combine warm milk, melted butter, egg, and vanilla extract. 🥛🧈🥚
- 3. Add the wet ingredients to the dry ingredients and mix until a shaggy dough forms. 🧑🍳
- 4. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic. 🖐️
- 5. Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size. ⏲️
- 6. While the dough is rising, prepare the crème brûlée filling: In a saucepan, heat heavy cream over medium heat until simmering. 🍶
- 7. In a separate bowl, whisk together egg yolks and sugar until pale and thick. 🥚🍬
- 8. Slowly pour the hot cream into the egg yolk mixture, whisking constantly. 🥣
- 9. Return the mixture to the saucepan and cook over medium-low heat, stirring constantly, until it thickens enough to coat the back of a spoon. 🥄
- 10. Remove from heat and stir in vanilla extract. 🧪
- 11. Pour the filling into a heatproof bowl, cover with plastic wrap (pressing it directly onto the surface), and refrigerate for at least 2 hours, or until chilled. 🥶
- 12. Once the dough has doubled, punch it down and roll it out to 1/2-inch thickness. 👊
- 13. Use a doughnut cutter or two different-sized round cutters to cut out doughnuts. 🍩
- 14. Place the doughnuts on a baking sheet lined with parchment paper and let rise for 30 minutes. ⏲️
- 15. Heat vegetable oil in a large pot or deep fryer to 350°F (175°C). 🛢️🌡️
- 16. Fry the doughnuts for 2-3 minutes per side, or until golden brown. 🔥
- 17. Remove the doughnuts from the oil and place them on a wire rack to cool. ♨️
- 18. Once the doughnuts are cool enough to handle, use a piping bag or spoon to fill them with the chilled crème brûlée filling. 🥄
- 19. Sprinkle the tops of the doughnuts with granulated sugar. 🍬
- 20. Use a kitchen torch to brûlée the sugar until golden brown and crispy. 🔥
- 21. Serve immediately and enjoy! 🎉
