  • Salt: 🧂
  • Milk: 🥛 warmed
  • Unsalted butter: 🧈 melted
  • Large egg: 🥚
  • Vanilla extract: extract 🧪
  • Heavy cream: for filling 🍶
  • Egg yolks: for filling 🟡
  • Granulated sugar: for filling 🍬
  • Vanilla extract: for filling 🧪
  • Granulated sugar: for brûlée topping 🍬
  • Vegetable oil: 🛢️

Instructions

  • 1. In a large bowl, whisk together flour, sugar, yeast, and salt. 🥣
  • 2. In a separate bowl, combine warm milk, melted butter, egg, and vanilla extract. 🥛🧈🥚
  • 3. Add the wet ingredients to the dry ingredients and mix until a shaggy dough forms. 🧑‍🍳
  • 4. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic. 🖐️
  • 5. Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size. ⏲️
  • 6. While the dough is rising, prepare the crème brûlée filling: In a saucepan, heat heavy cream over medium heat until simmering. 🍶
  • 7. In a separate bowl, whisk together egg yolks and sugar until pale and thick. 🥚🍬
  • 8. Slowly pour the hot cream into the egg yolk mixture, whisking constantly. 🥣
  • 9. Return the mixture to the saucepan and cook over medium-low heat, stirring constantly, until it thickens enough to coat the back of a spoon. 🥄
  • 10. Remove from heat and stir in vanilla extract. 🧪
  • 11. Pour the filling into a heatproof bowl, cover with plastic wrap (pressing it directly onto the surface), and refrigerate for at least 2 hours, or until chilled. 🥶
  • 12. Once the dough has doubled, punch it down and roll it out to 1/2-inch thickness. 👊
  • 13. Use a doughnut cutter or two different-sized round cutters to cut out doughnuts. 🍩
  • 14. Place the doughnuts on a baking sheet lined with parchment paper and let rise for 30 minutes. ⏲️
  • 15. Heat vegetable oil in a large pot or deep fryer to 350°F (175°C). 🛢️🌡️
  • 16. Fry the doughnuts for 2-3 minutes per side, or until golden brown. 🔥
  • 17. Remove the doughnuts from the oil and place them on a wire rack to cool. ♨️
  • 18. Once the doughnuts are cool enough to handle, use a piping bag or spoon to fill them with the chilled crème brûlée filling. 🥄
  • 19. Sprinkle the tops of the doughnuts with granulated sugar. 🍬
  • 20. Use a kitchen torch to brûlée the sugar until golden brown and crispy. 🔥
  • 21. Serve immediately and enjoy! 🎉
