Ingredients

  • 🥥 Coconut milk – 1 can
  • 🍚 Rice – 1 cup
  • 🍗 Chicken or tofu – 1 lb
  • 🌶️ Curry paste – 2 tbsp
  • 🥦 Mixed vegetables – 1 cup

Instructions

  • 🍚 Prepare rice according to package directions.
  • 🔥 Sauté curry paste in a pot until fragrant.
  • 🍗 Add chicken or tofu and cook until browned.
  • 🥥 Pour in coconut milk and add vegetables. Simmer until cooked through.
