Ingredients
- 🐖 Pork shoulder – 3 lbs
- 🍊 Orange juice – 1 cup
- 🍋 Lime juice – 1/2 cup
- 🧅 Red onion – 1 sliced
- 🧄 Garlic – 6 cloves minced
- 🌶️ Annatto paste – 4 oz
- 🌿 Oregano – 1 tbsp
- 🧂 Salt & pepper – to taste
Instructions
- 🔪 Marinate pork in citrus juices, annatto paste, garlic, oregano, salt & pepper overnight.
- 🔥 Wrap marinated pork in banana leaves.
- 🥘 Slow cook in a low oven (300°F/150°C) for about 3 hours, or until very tender.
- ✨ Shred the pork and serve with pickled red onions and habanero salsa.
- 🌮 Serve in tacos, tortillas, or as a main dish with rice and beans.
