Ingredients

  • 🐖 Pork shoulder – 3 lbs
  • 🍊 Orange juice – 1 cup
  • 🍋 Lime juice – 1/2 cup
  • 🧅 Red onion – 1 sliced
  • 🧄 Garlic – 6 cloves minced
  • 🌶️ Annatto paste – 4 oz
  • 🌿 Oregano – 1 tbsp
  • 🧂 Salt & pepper – to taste

Instructions

  • 🔪 Marinate pork in citrus juices, annatto paste, garlic, oregano, salt & pepper overnight.
  • 🔥 Wrap marinated pork in banana leaves.
  • 🥘 Slow cook in a low oven (300°F/150°C) for about 3 hours, or until very tender.
  • ✨ Shred the pork and serve with pickled red onions and habanero salsa.
  • 🌮 Serve in tacos, tortillas, or as a main dish with rice and beans.
