Clay Oven Roasted Pork

Ingredients
- 🥩 Pork shoulder – 2 lbs
- 🧄 Garlic – 4 cloves, minced
- 🧅 Onion – 1 large, chopped
- 🌶️ Ginger-Garlic paste – 2 tbsp
- 🍋 Lemon juice – 2 tbsp
- 🌿 Spices (cumin, coriander, turmeric, garam masala) – to taste
- 🧂 Salt – to taste
- 🏺 Yogurt – 1/2 cup
Instructions
- 🥣 Marinate pork with yogurt, ginger-garlic paste, lemon juice, spices, and salt. Refrigerate for at least 2 hours or overnight.
- 🔥 Preheat clay oven (tandoor) or regular oven to 450°F (232°C).
- 🧅 Spread chopped onions at the base of a roasting pan.
- 🥩 Place marinated pork on top of the onions.
- 🌡️ Roast for 60-75 minutes, or until the pork is cooked through and tender. Check internal temperature.
- 🌿 Garnish with fresh cilantro and serve hot with naan or rice.
