Chicken Liver Parfait

Ingredients

  • 🐔 Chicken livers – 500g
  • 🧈 Butter – 100g
  • 🧅 Onion – 1 medium, chopped
  • 🧄 Garlic – 2 cloves, minced
  • 🥛 Cream – 50ml
  • 🍷 Brandy – 2 tbsp
  • 🌿 Fresh thyme – 1 sprig
  • 🧂 Salt and pepper – to taste

Instructions

  • 🔥 Melt butter in a pan and sauté onion and garlic until softened.
  • 🐔 Add chicken livers and thyme; cook until lightly browned but still pink inside.
  • 🍷 Deglaze the pan with brandy, then add cream and simmer for a few minutes.
  • 🥣 Transfer the mixture to a blender and blend until smooth.
  • 🧂 Season with salt and pepper, then pour into ramekins and chill for at least 2 hours. Serve with toast.
